WHere is an easy version of a cocktail found on our latest cocktail list. It's a batch prepared mix that is loaded full of flavours of the festive period, which makes it excellent for a festive gathering. Reserve the remaining syrup to use in morning drinks, sweets, or to make additional servings of the drink.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Citrus Syrup: Combine the listed items inside a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and let it to cool down completely. Decant into an sterilised bottle, cap it and store chilled, it can be stored for up to one month.
To make Batch Mix: Pour all the liquid ingredients in a sizeable container, allow it to infuse for one hour, then filter it best through cheesecloth, making it completely strained.
For serving: Add 85ml from the batch mix into your stirring glass filled with ice, gently stirring gently for about 60 seconds until cold. Pour to a chilled martini glass or equivalent, top with a few cranberries and complete it by giving it a light spray with the mandarin essence over the top.
